Snowman cookies

You might have seen Pret's Melvin the gingerbread snowman - now I'm not actually the biggest fan of gingerbread but loved the concept, so I thought I would try something similar with my regular cookies. These are super easy to make and are a cute addition to any Christmas party, or just a fun holiday activity. Bonus points for naming the snowmen!


Tips:

The cookies are easier to scoop and roll if you leave the dough to chill in the fridge for 30mins or so. Once rolled into balls you can leave in the fridge overnight to bake the next day or freeze in a ziplock bag - these will keep for a few months and you can bake from frozen (takes 14-15mins in the oven).


Once baked the cookies are best eaten fresh but will keep for a couple of days in an airtight container at room temperature.




 

Recipe

Prep time: 15 minutes

Cook time: 10-12 minutes

Makes: 10 cookies


Ingredients:

100g Granulated Sugar

165g Light Brown Sugar

115g Butter

1 Egg

1 tsp Vanilla Extract

180g Plain Flour

1/4 tsp Baking Powder

1/4 tsp Bicarbonate of Soda


For the decoration:

100g White chocolate, melted

10x Large white marshmallows

Black and orange food pens/ writing icing

Matchsticks

Smarties/ m&ms/ skittles



Method:


  1. Preheat the oven to 180°C and line two baking trays with parchment.

  2. Melt the butter and put in a large mixing bowl. Add the two sugars and whisk to combine, until there are no lumps and it is a smooth paste.

  3. Add the egg and vanilla extract and whisk until fully combined.

  4. Sift in the flour, baking powder and bicarbonate of soda and fold in until the flour is fully combined.

  5. Scrape a tablespoon of the dough, roll into a ball and place on the baking tray. Leave enough space between each ball (10cm) and the sides of the tray because they spread!

  6. If you have enough time, refrigerate the cookies for at least 30 minutes before baking, or you can leave in the fridge overnight. This helps prevent a mass spread and also gives a deeper flavour to the cookies.

  7. Bake for 10-12 minutes, until the cookies are golden on the outside but still soft in the middle. Allow to cool on the baking trays as the middles will still cook, giving them that chewiness.

  8. Once cooled, melt the white chocolate and spoon into the middle of each cookie and spread around. Make snowman 'faces' on the marshmallows using the black and orange food pens/ writing icing, and place on the white chocolate.

  9. Break the matchsticks to make small arms and put on the chocolate along with the smarties for buttons. Leave the white chocolate to set (place in the fridge for 15 mins to speed this up) before tucking in.
